Yes, I said it - PALEO Cereal. Is there such a thing that could actually taste good??

And just a side note to help my readers, if you were like me about 6 months ago, you are probably scratching your head at the name of "Paleo." What is Paleo?

Well, the simple definition from lovely Wikipedia, is, "Paleolithic [Paleo for short] diet consists mainly of meat, fish, vegetables, fruit, roots, and nuts; and excludes grains, legumes, dairy products, salt, refined sugar, and processed oils."

So I eat a lot of what it just says up there. We don't always follow the Paleo diet exact, as some things, like potatoes, legumes, corn, etc. are sometimes unavoidable and we are sometimes in situations where we just eat whatever is offered. That is the beauty of living in community, dontcha know! :)

So back to the real meaning of this post -- just yesterday, we followed a recipe that was so yummy. So yummy I ate the exact thing again this morning -- and I probably will eat it tomorrow morning too. It consists of the following:

Frozen blueberries - 1/2 cup

Strawberries OR Apples - 1/2 cup of Strawberries or 1/2 of an Apple

Banana - 1/2 of one

Pecans - 1/4 cup

Walnuts - 1/4 cup

Macadamia Nuts - Sprinkle ontop

Flax Seed - 2 Tbsp

Almond Milk - however much you want. (NOTE: We chose to get Vanilla Almond Milk. It is quite tasty this way - you can get just regular Almond Milk and I'm sure it would taste good, too)

So after you combine it all together, minus the Almond Milk - VOILA! This is how it turns out:

So good. So good. SO GOOD! I can't reiterate how good this was. 

Oh, and if I haven't mentioned, I'm a cereal LOVER. This is one thing I have missed terribly ever since we've stopped eating grains. So, to say the least. I'm hooked on this cereal.

Also, since this cereal doesn't have much protein in it, we ate some turkey bacon on the side.

CAUTION - it can get a little expensive, especially on the macadamia nuts. SO, if I were you, I would watch for sales, or not buy as much on the macadamia nuts. As well, I've noticed that you could even use less in your cereal because it is a big portion. But, since I am a cereal lover, I don't mind paying a wee-bit more. :)

2009 in a Glance

2009 has come and gone folks! It's crazy to me how fast time has flown and we are now in 2010! I never thought 2010 would come!! ha!

In the year 2009 I met some of the most amazing people who really impacted my life! It was so much fun being a part of their lives and showing the beauty of their life with my camera.

This year was a lot of 'firsts' - my first engagement sessions, weddings, children's, and more. It was a year of challenge as I was in situations where I had never been before (extremely dark lighting, etc). It also was a challenge to learn how to balance my full time job, photography and several other things.

But, I made it! And on to a new year with so many exciting possibilities!!

I wanted to celebrate the year of 2009 by showing my favorites from all the shoots I did. I hope you enjoy and thank YOU for making this year!

The Pound For Pounds | The Pound - CrossFit Plano

Josh (my husband) and I go to a gym in Plano, TX called, "The Pound" (aka CrossFit Plano). It's an awesome gym. I think what makes it so awesome is the coaches and the community. When you go, you get an amazing workout, but I leave everytime with something new to chew on with fitness. If you're in the Dallas area, feel free to check them out! We'd love to see you there.

The owner of the gym, Troy Dodson, is really big on nutrition and the effects it has on your body. So he put this event together called, "The Pound for Pounds," where two people from the gym who enjoy cooking and creating meals, put together a meal for all of us to eat. Then afterwards, we voted on the meal that was through was the best. All of the food was healthy - grass-fed beef, organic vegetables, etc. It was hosted on the Chamonix II in Lewisville, TX. If you ever have a chance to get on this boat, do it! It was GORGEOUS!

Anyways, enough of me rambling, here are some of the pictures from the event. Enjoy!
