Albuquerque Balloon Fiesta | Personal Post

I had the chance to go to the Albuquerque Balloon Fiesta with friends and it was SO MUCH fun! :) Thank you again Laura for inviting us to go! 

These are just a few pictures that I took of our time there. If you've never been, you have to go at least once in your life. It is so beautiful and amazing how these balloons just take off. It almost is surreal!

So here's the story of our time... :)

It poured raining the night before, but luckily it stopped and it allowed for the morning "mass ascension" as they call it, to happen. But, the rain made some nice puddles, which allowed for some great shots! :)

There was so much color at this Fiesta! So many shapes and sizes of balloons too!

So this was my picture taking buddy that day. Thanks Johanna for hanging out with me. :) It was fun!

And jump the next day and we're on our way home! And we decided to stop at a random picnic table (with the goodies that Laura's Mom hooked us up with) in a very random city called "Holbrook". This city had random dinosaurs everywhere. And little alien things. It was...interesting. :)

Anyways, Ronnie, Laura and Johanna are acting like monkey's! :) haha

And not sure what we're doing, but we wanted a banana picture too. :)

And a very beautiful sunset followed us home. It was lovely. :)

Phoenix Is Interesting... | Random Personal Post

So, back in April, I went with some of my good friends to the Superstition Mountains. It was all very beautiful. It's crazy how diverse Arizona becomes only within a couple hours. You can get any climate you want, really. Just drive a couple hours North from Phoenix, and in Flagstaff you'll get cooler weather, beautiful trees and mountains. And of course, if you want the 'scalding' hot temperatures of 120 :) then just stay in Phoenix. :)

Anywho, I took this random picture of this plant/thing. :) ha! Do you know what it is? I sure don't. 

Regardless, I thought it actually was a very pretty picture and wanted to post it. 

So in regards to what's up next on my blog...I hope to post some wedding pictures from a beautiful couple that just got married this past Saturday and I have a few other events (my trip to India and the Miss Arab Pageant from last November) that I'd still like to post, even though I haven't done that yet. Whoops! Time just keeps flying. ;)

I think I should stop baking...! | Personal aka random :)

I have been trying to bake...I've tried baking apples to make apple crisps (that didn't turn out too well) and now I've tried muffins! Particularly blueberry muffins! I had a craving for some when I was with some friends of mine and decided that I was going to make them.

I actually had all the ingredients at home, so last Wednesday I made the batter (which smelt so good, by the way) and put them in the oven and cooked them. They came out looking beautiful:

...but, I guess 'beautiful' isn't synonymous with 'tasty'. 

:)

Josh and I tried some after our dinner and they are okay. They aren't so amazing that you'd eat the pan in one setting! 

I was pretty dissapointed. I followed the recipe exact (well, minus the flour, we had pastry flour so I used that..maybe that was the problem) - I'm thinking it's the recipe's fault. That sounds good to me. :) At least it makes me feel a little better. :) hehe

So I am going to try this again soon and hopefully they will be amazing in both look and taste!

Want some cilantro? | Random Post

I really like food. A lot.

Especially when you have garnishes on top that add so much flavor. Cilantro is one of them that I just love to put on top of things - enchiladas, eggs, burgers, etc. It's really good freshly chopped. Yum!

When I was hanging out with some friends the other day, I took these random pictures of cilantro. :) 

If you haven't tried cilantro, seriously...you're missing out.

And that's my random post for the week!! :) 

So upcoming soon is some pictures of some cute, CUTE kiddo's. Will be posting those probably next week! In the meantime, I might just take some more random pictures of food. :) hehe

To put it nicely, baking is not my thing... | Personal

As you've seen from previous posts (read this post for a laugh) I'm not the best person to go to for cooking, baking, etc. I can cook. But when trying new things, sometimes it can be a train wreck. Or in this case a burnt smelling apartment. :)

I always have good intentions that go sour. 

So if you've read my previous post (about Bare Fruit) then you can see where this is heading. I decided that I wanted to try to make my own apple chips. I did some preliminary research online and found many recipes. It's very simple - just slice up your apples, put them on a *cookie sheet that is not non stick* and bake at 225 for one hour. 

Simple right? 

Yeesh. My simple situations turn too complex. Here is what mine looked like:

Now, I can somewhat blame this on my husband, as we went over to a friend's house randomly, and I was trying to get him to leave because of the apple chips in the oven, and when we got back they looked like this. But, then we later realized when doing batch #2, that I had the temperature wrong in the oven. 

Whoops! :)

My second batch wasn't burnt, but I didn't use a cookie sheet that wasn't a non stick. I couldn't even take the apples off the sheet to turn them over. The ones I could get off were pretty tasty.

Whoops again! :)

So next time (if there ever is a next time for me) I will follow directions better.
